Saying that this whole SCD thing was getting easier may have been a bit misleading. It is easier but not easy by any stretch of the imagination. For one thing, you have to cook everything from scratch.
You may be thinking what I thought the first time I read that. Bid deal. I cook everything from scratch anyway. Yeah... not so much. I have never had to make my own ketchup, mayonnaise, beef and chicken stock, garlic powder, onion powder, vanilla, etc, etc, before. Sure, I had the option of doing so, but I also had the option of running to Meijer and grabbing what I needed if I didn't have time to make something.
Right now we are really struggling with snacks and quick "go-to" meals. Sure, we snack on fresh fruits and vegetables, like we used to. But lemme tell you... sometimes you just want a damn Oreo.
Come home later than you thought? Forget grabbing that box of pasta off of the pantry shelf or using those canned beans and tomatoes and having spaghetti or chili on the table in 20 minutes.
So my goal for the next few weeks is to come up with some snacks to keep on hand, and to come up with some ideas for quick easy meals.
I have come across some cookie recipes that look really good, and I think the key to quick meals might be either the crock pot or freezer meals. I will let you know what I come up with.
Today was Alex's first day away from home since starting the diet. (All three are spending the day at a friends house.) I talked to the mom and she knows what he can and can't eat, but this house is full of yummy stuff that he can't eat. Luckily he had a dentist appointment so I was able to pick him up from the friends house a bit early and bring him home for lunch. I asked him if he wanted to take some fruit and vegetables with him, but he declined. I'm not sure if he was embarrassed or just tired of fruit and vegetables.
